This recipe for good old spaghetti bolognaise is full of traditional flavours, healthy beef broth and needs the best quality beef and pork mince you can find to give that lip smacking after glow!

Bolognaise1kg beef mince (or 500g beef & 500g pork)
2 carrots, grated
2 sticks of celery, finely chopped
1 onion chopped
1 teaspoon garlic
250 ml red wine
1 small can of tomato puree
Fresh herbs – basil, marjoram, thyme, oregano
1 cup homemade beef stock
100ml cream
Grated parmesan
Packet of spaghetti (or carb clever noodles)

Fry the vegetables in some olive oil.
Add the mince and brown until golden.
Pour the wine over and cover, simmer for 2 minutes.
Add the stock, herbs and puree. Cover and cook for 1 hour 20 minutes on the lowest heat. Stir in the cream just before serving.

Cook the pasta.

Serve with Parmesan.
