IMG_1473This is not my original invention, it comes from my latest favourite cook book: My Low Carb Kitchen by a local mom Vickie De Beer. I have adjusted the sides to meet my seasonal needs and make it easier to get a hearty meal on the table quickly.

Ingredients:
2 packs of our grass fed beef mince
1 pack of our A2 cows milk haloumi
Seasonal roasting veg (either aubergine and cherry tomatoes OR sliced peppers, red onion and tomatoes)
Tub of humus of your choice*
Fresh Rocket
Homemade or shop bought tzatziki

Heat the oven to 180 deg and roast your vegetables after sprinkling with olive oil, salt, black pepper and the Basaltic vinegar until they are soft.

Put the beef mince into a bowl, sprinkle with salt and black pepper and massage. Form into 8 patties. Cook in some olive or coconut oil until done.

While the patties and vegetables are cooking lay out the plates and add a healthy dose of rocket, humus and tzatziki to each plate. Cook the halloumi and add to the plate. When veg and patties are done place these on the plate too. You will have a colourful delicious dinner in no time!
