image1Offal or organ meat has had a bad wrap but it is in fact one of the high density protein foods that our bodies can use with joy for muscle repair, weight loss and nutrition. Here is a simple liver and onions recipe we made this week.

For 4 people:

1kg chicken livers – washed and drained
2 onions – sliced
1 packet bacon lardons
2 cloves of garlic – pressed
A handful of sage – chopped
1 tablespoon of butter

Melt 1 tablespoon of butter in a pan, fur the onions then add the garlic and lardons. When the lardons are cooked remove all from the pan and add the second table spoon of butter.

Raise the temperature and add the livers to the pan. Cook thoroughly on one side, then flip to cook the other. Add the onion mix back to the pan. Check a liver by cutting through. They should be slightly pink inside.

Sprinkle over the sage leaves, salt and freshly ground pepper. Enjoy!
