chickenminceThis is one of our favourite recipes for a summer lunch. It’s got all the right labels – Paleo, Banting, Low Carb – yes for real!!

500g chicken mince
1 sweet red pepper, cubed
1 large tomato, cubed
1 red onion, finely chopped
Fresh coriander, chopped
1T Cumin powder
Salt
Pepper
3 romaine lettuce heads.

Fry the chicken mince and break it up as you go. Add the red pepper, tomato and onion once it has changed colour.

romaineFry for a few minutes so that the veggies are still crunch but the mince is well cooked.

Add spices. Stir and turn off the heat.

Click the leaves of the lettuce off the stalk and then each person scoops mince into as many leaves as they want. Eat right away. YUM!
