This light low carb salad is perfect for hot summer days.

IMG_2350Ingredients:
1 smoked chicken breast per person
1 pack low carb noodles
1 tub pomegranate jewels
1 bag various salad leaves
125ml Olive oil
2 crushed clovesGarlic
1 heaped teaspoon wholegrain mustard
25ml white wine vinegar

Slice your salad leaves, chicken fillets ad toss in a bowl with the pomegranate. Stir fry the noodles and set aside to cool.

Mix the salad dressing ingredients together.

Combine the noodle and other salad items, drizzle with the dressing. Enjoy!
